■Lecturer: Patricio Garcia de Paredes (Director, Global Macrobiotics School)
Born in Spain in 1970, she began a macrobiotic lifestyle at the age of five after her mother's severe kidney disease improved through macrobiotics. After moving to the United States and graduating from high school, she studied under Michio and Aveline Kushi at the Kushi Institute in the US. As a freelance macrobiotic instructor, she travels throughout North and South America, Europe, and Southeast Asia, giving lectures, working as a restaurant chef, private chef, coach, and consultant. Upon her first visit to Japan, she was surprised to find that traditional Japanese food was disappearing, and she felt a desire to one day give back to Japan, which had guided her and her family to good health. After moving to Japan, she held various positions as recipe developer, chef, director, and instructor at Kushi Garden Restaurant, Shinjuku Chaya Macrobiotic Restaurant, and Kushi Institute of Japan. Currently, she established the Global Macrobiotics School in Nara in 2023 and teaches mainly in Asia as its director and chief instructor.

This is a course to learn about the principles of Eastern medicine and philosophy (the order of the universe) from the writings left behind by Sakurazawa Nyoichi, the founder of macrobiotics. In today's society, where problems such as environmental pollution, economic downturn, war, the spread of disease, and hunger are piling up, clues to solving these problems may be found in the traditional medicine and philosophy passed down from ancient times in the East.
