 The hospital has been providing food on its own since it first opened, but Director Reiko Uematsu wanted to make delicious blended meals for patients who have difficulty swallowing, so she decided that an acquaintance of her eldest daughter who lives in Osaka could cook. I asked Ms. Sanae Otani, an instructor at Seishoku Cooking School, for advice.
 Mr. Otani, who was born in Hokkaido, happened to meet Mr. Michio Kushi, who was active as a world-famous macrobiotic teacher when he was in Tokyo, and was recommended macrobiotics. I learned to cook straight meals.
 Mr. Otani, who has experience working in the side dish department of a supermarket, visited Takachiho for the first time in September XNUMX at the request of Director Uematsu.
 Mr. Otani, who was asked by Director Uematsu to provide school lunch guidance, started by helping with inventory management of ingredients and other items that had previously been handled by Director Uematsu and the staff of the Nutrition Section.
 As for the mixed meal, I wondered if I could make use of the wisdom of regular meals in the menu.
 As for regular meals, "brown rice cream" made by boiling and squeezing roasted brown rice is also useful as a food for recovery.Mr. Otani first thought that the brown rice cream should be eaten by inpatients.
 However, it takes a lot of time and effort to make hundreds of meals a day.Therefore, as a way to have brown rice, which is rich in nutrients such as minerals and vitamins, be cooked together with white rice, the staff of the Nutrition Section played a central role in creating a blended meal of white rice and brown rice in the form of porridge. developed.

Focus on local organic produce
 "I want to provide patients with food that is easy to understand when it is harvested from which field and when it will be put into their mouths." I also started using rice and vegetables.
 Furthermore, in order to make the food as safe as possible, we now use “nearly XNUMX%” organic rice harvested in Takachiho Town (Director Uematsu), and we also purchase organic vegetables mainly locally, and support organic farmers.
 In some cases, patients and staff work together to use vegetables grown in occupational therapy.
 Takachiho, located at an altitude of around XNUMX meters, is rich in seasonal crops, including cold highland vegetables.One of the advantages of Takachiho is that it is easy to realize local production for local consumption by taking advantage of the familiar conditions of the production area.
 Regarding the menu, Director Uematsu was particular about "providing what patients usually eat at home."
 For example, the French and Italian dishes that are served in fancy restaurants are not accepted by patients, who are mainly elderly, and they prefer ordinary home-cooked meals.In fact, when I was shown the current menu, it included rice and miso soup, simmered mackerel, boiled soy sauce, vinegared dishes, and salad.
