 Director Uematsu also said, "Patients like the old-fashioned country taste," and plans to continue cooking on his own for the time being.
 Mr. Otani travels to Takachiho every month, including overnight stays and sometimes day trips. Keiko Kai and newcomer Mayuko Matsuda, registered dietitians, calculate the amount of nutrients and calories, and create a menu after repeated trial production in the nutrition section.

 I also visit hospital rooms and ask patients about their impressions and requests regarding school lunches.

 Bedridden patients eat in their own rooms, so the patients who visit the cafeteria are relatively healthy people.

 You can't really see them smiling, but you can tell that they are satisfied with their meals by the way they happily finish off the meals that are served to them.
 This may be related to the staff's detailed consideration of the size of the ingredients and the ease of swallowing, and making just the right amount.

Also reduce dietary supplements
 Calories and nutrition are properly calculated for school lunches, so if you leave something behind, you will not be able to get the calories and nutrition you need.
 Then, in order to supplement the necessary calories and nutrients, processed foods called "dietary supplements" and "foods with nutrient function claims" that can supply specific nutritional ingredients are sometimes used.
 It is not a so-called supplement, but a jelly or drink, and various types are sold by major food manufacturers.
 Director Uematsu also said, “I personally don’t like nutritional supplements.
 I was able to reduce the amount of nutritional supplements, etc., because I was close to eating a full meal.
 Mr. Otani will continue his efforts at Kunimigaoka Hospital, and if possible, considers whether his experience and achievements in Takachiho can be used to improve school lunches at other hospitals and facilities.
